Inspired by a Danish cardamom bun: fierce, stinging ginger with just enough sweetness from the white chocolate. Made only before Christmas, until the end of November.

The panettone
A labour of love, made over three days and 100% naturally leavened with our own pasta madre. Baked in small drops: when it's gone, it's gone until the next bake.

Molino Pasini Wheat Flour, Edinburgh Butter Company Unsalted Cultured Butter (Milk), Pasture-Raised East Neuk Egg Yolks, Caster Sugar, White Chocolate 10% (Sugar, Cocoa Butter, Whole Milk Powder, Soya Lecithin), Agrimontana Candied Ginger 10%, Pasta Madre Sourdough (Wheat Flour, Water), Almond Glaze (Caster Sugar, Egg White, Ground Almonds, Cornflour), Water, Honey, Sicilian Oranges, Salt, Freshly Ground Cardamom 0.3%, Vanilla Paste (Madagascan Vanilla Pods, Water, Sugar, Lemon Juice).
